Mexican Lime Spinach

Ingredients
  • 1 tablespoon fat of choice
  • 1 whole jalapeño seeds removed and finely diced
  • 2-4 clove garlic minced
  • 1 whole shallot or red onion; thinly sliced
  • 12-16 ounce baby spinach
  • 12 whole lime juiced; or 1 T lime juice
  • salt & pepper to taste

Directions
  1. In large pan at medium heat, sauté jalapeño for 2 minutes in fat.
  2. Add onion and garlic and sauté for 2 more minutes.
  3. Add spinach and cook until wilted.
  4. Add lime juice, salt and pepper.
