Cucumber Yogurt Raita Salad

Ingredients
  • DRESSING
  • 2 tablespoon lemon juiced
  • ½ cup yogurt, plain greek or icelandic
  • 1 whole jalapeño or other chile; minced, divided
  • 1 clove garlic minced
  • 1 inch ginger, fresh peeled & grated
  • 1 drop stevia
  • 1 teaspoon cumin, seed or nigella seed, black or yellow mustard seed
  • 2 tablespoon mint chopped, divided
  • 2 tablespoon cilantro chopped, divided
  • SALAD
  • 2 whole cucumber, English
  • 1 cup tomato, cherry or grape tomato; quartered
  • ½ whole onion, red chopped
  • salt to taste

Directions
  1. Squeeze lemon juice into bottom of blender. Add yogurt, garlic, ginger, stevia, cumin, and half of the chile, mint and cilantro. Pulse to combine.
  2. Chop cucumber to the size of the quartered tomato. Combine with tomato and onion.
  3. Stir dressing into cucumber mix, refrigerate and let marinate for up to 2 hours.
  4. Before serving, garnish with remaining mint and cilantro.
