Sautéed Spinach

  • 1 tablespoon fat of choice
  • 1-2 whole onion, shallot thinly sliced
  • 2-3 clove garlic to taste; minced
  • 12-16 ounce spinach
  • salt & pepper to taste

  1. In a large skillet, heat fat over medium heat. Stir in shallots and garlic, stirring frequently to prevent burning. Cook until transparent, about 3 minutes.
  2. Add spinach, sprinkle with salt and pepper; cook and stir 3-5 minutes until leaves are wilted and reduced.
