Creamy Chicken, Kale & Red Onion

Course: All-In-One
Main Ingredient: Chicken

  • 1 whole egg room temperature
  • 1 whole onion, red halved and sliced thick
  • 1 tablespoon EVOO
  • 1 tablespoon fat of choice
  • 16 ounce chicken thigh boneless, skinless
  • 12-16 ounce kale stems removed, cut into bite size pieces
  • 3 clove garlic or to taste
  • 1 tablespoon ghee or butter
  • 5.4 ounce coconut cream or heavy cream
  • 12 teaspoon white pepper
  • salt & pepper to taste

  1. Preheat the oven to 425°F.
  2. Toss onion lightly with olive oil.
  3. Add fat to a large cast iron pan or oven safe skillet over medium-high heat.
  4. Season chicken thighs on both sides with salt and pepper. Add chicken to hot skillet and brown one side 3 minutes and then turn and immediately place in the oven with onions on top.
  5. Let everything roast together for 15-20 minutes (chicken to an internal temperature of 165°F).
  6. While the chicken and onion are roasting, prepare kale and sauce.
  7. Place one cup of water in the instant pot, add a strainer, followed by garlic cloves and the kale. Set to high for 1 minute. When the cycle finishes, wait another minute and then quick release.
  8. Melt ghee or butter on low in a small saucepan, add coconut cream, raising heat to medium-high.
  9. Remove garlic from IP and add with egg to an immersion blender container or mini food processor.
  10. Spoon two tablespoons of the hot mixture into the blender container or food processor with the egg and garlic in it. Add salt and white pepper, then pulse to combine. Once combined, add the rest of the sauce and pulse until combined. Pour back into saucepan, setting to medium-low.
  11. Remove pan from oven and set chicken aside. Then add kale and sauce to the onions.
  12. Shred the chicken into large bite sized chunks and return to pan.
  13. Stir to combine and serve immediately.
