Chipotle Chicken Cauliflower Bake

Ingredients
  • 6 strip bacon cooked, crumbled
  • 2 tablespoon fat of choice leftover bacon grease works great
  • 1 pound chicken thigh boneless, skinless
  • 14-20 ounce cauliflower florets
  • 1 whole pepper, red bell chopped
  • ½ cup tomato, cherry chopped
  • 3 clove garlic minced
  • 1 cup onion, green chopped
  • 5.4 ounce coconut cream or ¼ cup heavy cream
  • 2 whole chipotle chili canned, chopped
  • 1 teaspoon chipolte chili sauce from can
  • ½ teaspoon cumin, ground
  • ½ teaspoon chile powder
  • ¼ cup cilantro chopped
  • salt & pepper to taste

Directions
  1. Preheat oven to 425°F.
  2. Sprinkle chicken with salt and pepper on both sides. Add half fat to oven safe skillet or cast iron pan and heat to medium. Cook chicken three minutes on each side. Place skillet in oven. Bake for 20-25 minutes, until chicken is cooked through.
  3. Coat cauliflower florets in bacon grease from cooking bacon or other fat.
  4. Spread cauliflower on baking sheet and put in with the chicken, roasting 10-12 minutes.
  5. Remove both skillet and baking sheet skillet from oven. Set chicken and cauliflower aside to cool.
  6. Turn oven down to 350°F.
  7. Return skillet to stove over medium heat. Sauté red peppers for 3 minutes. Add green onions, tomatoes and garlic and sauté for 2 minutes longer. Add coconut cream, chili powder, cumin, ancho chipotle chili, salt and pepper. Turn stove-top to medium-high heat until slightly thickened. Remove skillet from heat and turn off stove-top.
  8. Add contents of the skillet, chicken chunks, cauliflower, crumbled bacon, and cilantro to a large bowl and stir together carefully to avoid mashing cauliflower.
  9. Put the contents of the bowl back in the skillet or in 9x13 pan.
  10. Bake until heated through and top is golden brown, about 20 minutes.
